  1. STOP. Go find if there are bags of pre-diced root vegetables in the walk-in
  2. If yes, toss with oil, S&P blend, and roast for 25-30 minutes
  3. If no, top beets and dice. Toss with oil, S&P blend, and in covered hotel pan roast for 45 minutes
  4. Prep and dice all other vegetables, toss in oil and S&P blend, and roast for 20-25 minutes
  5. Allow all vegetables to cool, then mix and store
