  1. Small Dice red pepper, poblano pepper, onion, and mix with corn
  2. In a stock pot, place vinegar, sugar, mustard, coriander, celery, S&P, and bring to a boil
  3. Add corn-veg mix to stock pot and bring back up to a boil
  4. Make a cornstarch-water slurry and add to stock pot of hot corn mix
  5. Stir until thick, ~2 minutes
  6. Spread on sheet tray for rapid cooling
  • If using fresh corn, 12 ears equals one bag of frozen
  • It is not necessary to thaw the bags of frozen corn
